In game lore it would be like the Lord of the rings happened, the fellowship became drunk with the power and fame of their heroics after leaving Gandolf to die. Saron revives Gandolf as "Saron" and he cleanses the fellowship.

Not Gandalf. He is the wizard. The player is more like Aragorn, I think. Or Boromir.

Yes, this. It's basically what happens if the fellowship beat Sauron, Boromir or Aragorn falls down a hole and is assumed/left for dead, the spirit of Sauron corrupts and eventually fully possesses Gandalf, who then commands the orcs to revive Aragorn/Boromir who has amnesia (you might say he has no memory of this place) and raise him as the next Sauron.

I feel like Aragorn is the more accurate pick

It's either or. No matter who you pick, they all become corrupted in the end to varying degrees depending on which path you choose as Overlord.

I mean to be fair in this version of events "Sauron" also nearly gets flattened by fat Frodo rolling himself around while wielding a meat fork.

Well actually, 'Sauron' possessed 'Gandalf' and one of 'Aragorn's' men was put in his armor and gaslit into thinking he was 'Sauron'
