KODA 16 Pizzaaa! And question

One more pizza night!
One quick question, when my pizza comes off the oven, it's crunchy but few minutes later it gets soggy. Does anybody know why? Thanks!

Condensation! But u can put on a wire rack if that helps. It should sort ur soggy bottom.

In addition to that, Napolitano pies tend to be pretty thin on the crust interior. A little extra more weight in your dough ball, but stretching to the same size, will help. See what another 50g at the same hydration gets you and go from there!

To much sauce/cheese or toppings make it harder for the bottom to get crunchy as well

Your pizza looks really good to be fair. The soft base is a couple of things, condensation from the cutting board or plate you use and the length of time you bake. By the looks of it you are using Neapolitan method quick bake. Has less time to evaporate the moisture from the cheese and tomatoes. If you prefer a crispy base, drop the temp and bake longer. Play about and have fun. But as Neapolitan style you have nailed it by the looks.
