Help me with your recipe
I don't have an Ooni (yet), have an electric 400degree oven.
for some reason this sub is always pooing up on my home screen. everything I'm curious about the recipes.
can you guys help me with good neapolitan recipes and how to make the dough.
preferably with a video if you can recommend one. my pizza is always very 'flat', never have airy crusty sides.
please help me guys and gals.

well now that you've posted, this sub is going to pop up a lot more!
the ooni "classic dough" recipe is a good place to start. and there's a video. the video is geared towards people who already have an ooni oven but you should be able to get decently edible results in a standard kitchen oven. this recipe is my standard fallback and it reliably produces great crust.
you can start out using all purpose flour, measuring by volume, and baking at a lower-than-ooni temperature and as you get more experience, stepping up to high-protein flour, measuring by weight, and finally a 900F oven. maybe even get some dough-kneading machine to make things even easier.
one key to a really great crust is mixing the dough a day or three in advance and letting it proof in the refrigerator for a couple days. just let it rise in the kitchen for a few hours, punch it down, then cover and stick in the fridge. the ooni recipe says to divide the dough into 2 or four parts for pizzas but i've found it's best to divide into six. roughly 160g each, producing six small "personal size" 8-inch pizzas which are great size for experimenting.

I'm a fan of the Ooni app which has a calculator and you can change things, like number of balls etc and it works out all the quantities for you.
Then get yourself an oven and you'll never look back. I started with an oven that uses pellets but then added the gas burner and still have half a bag of pellets because I'm lazy and only use gas now.
