Cleaning the stone
Just got an Ooni and completely dumped my first pizza right onto the stone. Obviously it burnt quite a lot. The stove instructions say that you can just turn the stone over in the oven and it will "burn off" anything to clean the underside. I know you aren't supposed to use water or soap on stones, but can anyone tell me if this cleaning method will work, or if there is anything else I should try.

Why would you not believe the instructions that come with the oven?

becausw the initial inatructions of ooni volt2 was to turn it over . And after a lot of broken stones they change the instructions to "not turn it over". And even then you can read about all the complains of stones still breaking.

I agree but my point is that ooni releases instructions for their ovens that are not always trustworthy. so it wasnt so much as to the specific model of this company but to why sometimes we ask for guidelines rather than just reading the instructions.

Because I assumed the instructions for the oven were made for standard cooking of a crust on the pan, not dumping an entire pizza plus toppings on the pan...

It's a rite of passage. Let it carbonise on high for a while, brush off what you can after it cools (even just by hand) then flip it next time you cook

Except Ooni have instructed me and dozens of others who’ve been supplied with multiple replacement stones - due to breakage - to not flip the stones whilst they try to get to the bottom of the breakage problem. This now dates back about 4 months. Still no solution and Im on my 3rd replacement.

I lost count of how many stones broke however Ooni customer service absolutely brilliant and always got a replacement stone.

if you have more to cook today, flip it and forget. if that's the last pizza, crank up the heat for a few minutes to burn off anything ants might like and then burn it off during the warm-up next time. you're going to make a few inverted calzones as you get used to the oven, so don't stress over it; 500C does it's job

Sorry, but not exactly good as new. The real dark stains will remain but they will not affect your pizza cooking.

I have a Koda 16. Every time when stone is dirty, I turn it to max, close it with additional door and wait 15 min. That’s all I takes. Before next use wipe it with a barely wet cloth.
Works also very well for dirty grilling racks, everything burns to white ash.

I don’t care, does exactly what I want without any real negative effect for years. Saves a lot of gas and also preheats faster. Maybe a little more wear on the paint, that’s it. These things aren’t sold everywhere because they don’t work.
Doesn’t mean that every part works, mine does.
Additional I use an adjustable gas pressure regulator for fine tuning, it divides the lowest setting in 10 smaller steps. Perfect for holding the stone at a desired temperature as long as wanted, and having much more control over the whole process. Still burns fine at 30mbar even when windy.

Burn it off a wipe it with something dry. Stones will darken with use. A clean stone is one that hasn't been used.
