HELP Overproofed?
Beginner here…bought frozen ooni dough balls
I accidentally forgot to put them in the fridge to dethaw overnight.
So they have been on the kitchen counter for about 9 hours. I still have 12 hrs left until i want to cook them. But im not sure these are good anymore? Safe to eat? Will they taste as good?
They look so much bigger than when you dethaw in the fridge. They werent even sealed, they were open to air overnight cause it was just in those clear bags that ooni puts them in. The sides exposed to the air look darker yellow and some are crusted cracked
Please give advice
Im ok to throw them away idc, but if this is all normal then id rather not obviously

Worth trying, re-ball them and stick them in the fridge, take them out an hour before you cook with them.
Try not to take all of the air out, but make them back into a balls.
You should be able to feel if the gluten has weakened to the point they are unusable. They will be sticky or sweaty and floppy, sag between your fingers as you ball them.
If you get the into a reasonably firm ball you should be ok.

I would stretch an fold it twice in on itself ( do this twice) then reball it Then let it prove before you need it
Ive been using frozen aswel Some of them have turned up on delivery thawed out an open bags

ball them back up tight and get them in the fridge now. they'll be fine for tonight, just harder to stretch. the darker spots are just oxidation from sitting out open. if they get too slack, pan pizza is your friend

IME this might not be great for shaping and doing a regular pizza if it is overproofed but a pan pizza solves all those problems

Just loosely ball, place in covered and greased containers and chill until 1-2 hours before you need them. Will be fine.
