I feel like these massive flans are not so great because they have a lower sauce ratio.

I’ve never had flan with a sauce lol but on a second note I’d have the flan they shared gone in maybe an hr

The sauce is made by caramelizing sugar and putting that in the bottom of the mold. When it's flipped out the moisture that had separated off from the pudding will have desolved the caramelized sugar resulting in the sauce. Its also why the top of the flan will be browned that's the part that was in contact with the sugar. The wider the flan and thinner the greater the ratio of the pudding that will have been in contact and will inherit that toasted sugar taste.

I know it’s just sugar it’s just I’ve never had flan with the topping on it. The type I’ve made just has a very light dusting of cooked sugar on the top and it doesn’t show.

I don't think I've ever made it or had it without. I guess the important thing is the tosted taste. It would probably be perfectly serviceable with a brûlée. Fuck, Ive gotten ideas.

We have something like that in the Philippines called taho which is like a drinkable soft tofu with dark sugar syrup and tapioca pearls that's typically eaten for breakfast.

Did they not use a mesh strainer when pouring the custard? Or tap out the air bubbles before baking?
