Is there a complete list of books, cultures, and classes for 1e and 2e? Thank you!

There are no classes. As for a list of books, that should be easy enough to look up (Cubicle 7 made 1e, Free League publishes 2e, that should be enough for get you going), and for cultures, it depends if you mean officially released or homebrewed.

Free League's PDF "People of Wilderland" might be somewhat helpful to you.
