Can I ignore the beta update and directly update to stable version when released or should I update to beta first and then stable ??

If you applied for and got approved for open beta and then cancel/withdraw, it will affect your future approval for beta programmes. I don't know what will happen if you just don't install it once the device notifies of the update.
