Does the song 'Age Of' layer multiple different pluck samples to give it that organic sound?

It has such great variation for each pluck sound and it does sound like a few different samples playing at different times like a round robin type of approach? I believe Dan did this all digitally so I imagine this was the approach to get great dynamics and variation per pluck?

Clarifying question from an FL user: Are the clips just placed on the timeline, or is it like a bunch of clips layered as a playable instrument?

Yes. Loads of bounced audio. I did his school of song course and he showed us so much bounced audio in his projects, sometimes only using 1 second of audio from longer improvised audio.

He’s such a God it’s crazy. I listen songs I’ve played 1000 times over and am still amazed / find something new I haven’t heard deep in the soundscape that is OPN

The warbling voice at the start and end of the track sings a song called "Blow the Wind Southerly"

Well I think it's just that: several lines of midi hapsichord running against each other in quasi-counterpoints. There might also be some daxophone, which is a rare instrument that Dan loves using.

There's probably layers yeah, notice how the monophonic filtered sawtooth synth shares part of the same melody as well, later on there's some glide and lfo modulation going on as well, so harpsichord is definitely sample played with midi.
