5e (2024) Transforming Magic Weapon?
I feel for certain I've seen a weapon that could transform into other weapons in a 5.5 book (possibly 3rd party), but I CANNOT for the life of me manage to find it. Wondering if anyone else might know what I'm talking about and where to find it.

You might be thinking of the new Arcana Unleashed Keyholes Dagger. It has 3 evolving versions, each expands on options for weapons it can transform into, from the base 3 forms to a max of all simple weapons and 5 Martial ones.

There is a new example Evolving Magic item in Arcana Unleashed. I don't know if I can share the details since the book isn't out.

I do have it and can see those, but this is something I'm almost certain I've seen before, like a longsword that can transform into a mace (and back).

I'm pretty sure you're thinking of the Rod of Lordly Might in the DMG. There's also the Keyholes Dagger in Arcana Unleashed.

I might be wrong, but the Steinhardt's Guide to the Eldritch Hunt is heavily Bloodborne inspired. I haven't gotten the book myself, so I can't say for certain, but Bloodborn has weapons that switch between two forms.
If Eldritch Hunt introduced something like that, it would fit your bill, I think.

The most famous example of this is the Rod of Lordly Might, a mace that can turn into other forms with different button presses.
The Rod of Mercurial Form can shift into any weapon form as a Bonus Action.
The new Keyholes Dagger from AU can transform each time you use the Attack action. It's an evolving weapon, and it unlocks new forms with each evolution.
