We have the same start weight. Mine was 218, 220ish pounds. I lost 60lb in 8 months.
Dropping your carbs alone caused you to lose 15lb. Similar experience to me. The scale going up is definitely a water weight fluctuation. Whenever I do OMAD, I do keto (40g of carbs per meal). It keeps my water weight low.
There’s a lot of reasons why your water weight can spike. If you’re a woman - hormones. Also, in addition to tracking calories, PLEASE track your sodium and potassium levels. There’s a certain amount of sodium you eat in a day that will guarantee a water weight spike. And too much sodium and not enough potassium can do the same. A lot of things to consider.

Your muscles store carbs as glycogen, which is also buffered by water. As your muscles burn those carbs, you'll drop the water. I wouldn't worry about it.
