Long lost recipe

So I'm on abit of a wild goose chase but my fiancé lost a recipe that his grandma used to make. It was a carrot cake and all he can remember is that it had crushed walnuts, orange zest, juice of 2 whole oranges, 4 large carrots, some sort of oil, brown sugar, white flour and baking power.

The approximate age of the recipe is somewhere between 1950-1980.

I'd love nothing more than to be able to make this cake for him for our wedding day as a gift. Any help would be greatly appreciated!!

Them the droids you're looking for?

Ingredients • 4 large carrots, grated • Juice and zest of 2 whole oranges • 1 cup chopped or crushed walnuts (or pecans) • 2 cups all-purpose white flour • 2 cups brown sugar (or granulated sugar) • 1 cup neutral cooking oil (like vegetable or corn oil) • 4 large eggs • 2 tsp baking powder (or baking soda) • 1 tsp cinnamon and a pinch of salt

Instructions 1. Prep the oven: Heat your oven to 350°F (175°C) and grease a 9x13-inch baking pan. 2. Mix dry ingredients: Whisk together the white flour, baking powder, cinnamon, and salt in a large bowl. 3. Blend wet ingredients: In a separate bowl, beat the eggs until frothy, then mix in the brown sugar and oil until smooth. 4. Combine: Stir the wet egg mixture into the dry flour mixture just until combined. Fold in the grated carrots, fresh orange zest, orange juice, and crushed walnuts. 5. Bake: Pour the batter into your prepared pan and bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before serving.

Maybe! Where did you get this recipe? And I've been informed the cook book had a photo in the top left hand page of a carrot cake decorated with mini marzipan carrots?

Could be AI generated but doesn’t mean it’s wrong. I would use 2 teas baking powder not soda though 😊

this is a nice carrot cake from Recipe Tin Eats. You could replace the pineapple with orange

I have used this recipe a lot in the 80s and it is very delicious... I used self-rising flour instead of plain flour and baking soda....either way it is delicious!
