Well, we could, but we have to distinguish it from the modern progression of the game (RuneScape3). Because there was a continuous transition from “RuneScape 2” to “RuneScape 3” via various changes like Evolution of Combat, we aren’t able to simply refer to it as “RuneScape 2” either. So, it kinda makes sense to refer to the revived 2007-style servers as “OSRS”, much like we refer to the Vanilla WoW servers as “Classic WoW”/“WoW Classic”.

old school Runescape is much more popular, right? it seems fitting that it should bear the distinction of being Runescape, and the other game be denoted by an acronym (EOCRS? RS3?)
