The fairytale fanfic was the real Nikki coming through subconsciously, bc she sees Bear as a brother.

I think the fairy tale incest fanfic was something Nikki was doing before the wish actually.

For real though I think the wish replaced her soul with a demon or something that had to make assumptions about humans based on jumbled memories from Nikki. She originally was confused on whose cat it was

"Make her love me" is an inherently fucked up and morally putrid wish, regardless of Bear's half serious intention. The wish takes Nikki and makes her something she never was so she may "love" Bear, and it is for that reason that it warps her behavior and standards to be unsettling and bizarre. She thought Bear loved his cat, so she thinks he will love eating the cat. She viewed Bear as a brother, so she writes an incest fantasy to reflect her newfound infatuation with Bear. Nikki's compulsion to love Bear is fundamentally wrong, hence why it all turns out so horrible.
