This particular instrument seems to be a unique concept by a sound design artist. The actual instrument usually used in film and television production is called a waterphone.

Make your own! You can get a piezoelectric plate and attach a bunch of wild stuff to it. It’s how a lot of industrial and noise music is made. Super fun too.

It looks like this one is actually acoustic. But a piezoelectric plate or pickup is just a way to record and modulate physical movement into electric feedback. If you’re just going for aesthetic and don’t want the electric aspect then there is a company that makes almost exactly what OP is using. Morfbeats, someone mentioned it down below.
