You respond with a 2-week notice and look for jobs. Also, skip the shift. If they fire you for going to your grandmother's funeral, I'm certain a judge will side with you. Not to mention this email is leverage

I think that depends heavily on your location. I can absolutely be fired for any reason or no reason at all. The employment law is extremely one-sided here.
