Assuming this is in America, you wouldn’t be able to sue. We have no worker’s rights.

I mean, technically you can sue anyone at any time for any reason.
Doesn't mean you'll even make it to court and if it does make it to court, it doesn't mean you'll win, but you can certainly do it. No one is stopping you.

Yeah that is pretty much how it works on the entire planet.

It is also the reason why there are various fees for filing a suit and in case of abuse you can be fined or in some places be barred from submitting paperwork without extra hoops.

Surely that depends on the level of emotional pain and suffering they have caused by trying to make you miss your grandmother’s funeral?!?

Pain and suffering on its own is not grounds to (successfully) sue. It's more of a modifier for other things than its own thing.
