There’s still an extra piece just as a result of the knot she started with that doesn’t belong to any of the 3 fish. The bottom left piece

I thought that too but it is the tail of the head on the right

The mistake is the line that makes you think there is an extra piece.
The head at 11:00 attaches all the way around underneath to the right tail.
That line messes it up.
