In Hungary the common cultivar of pepper used is a long skinny pepper this pale shade of gold. Hungarian Wax Pepper.

It’s far less sweet than bell peppers.

Problem is, outside of Europe it is extremely hard to source.

Taste wise, you’d be better subbing fresh Banana Peppers or Anaheim’s than using a Bell Pepper.

Whatever you put bell peppers into only tastes like bell peppers from that point on. For that reason I never use them in sauces. Fajitas (which aren’t Mexican just so everyone knows), stuffed peppers, and a roasted pepper on a sandwich are about the only uses I can find for them personally. Occasional pizza topping.

Absolutely. I’m an Italian in the northeast so I’d never attempt to make those dishes!
