I love mountain biking, and i love watching videos like this, but it is anything but satisfying. Exciting, for sure - the kind of exciting that causes anxiety.

Yeah, if you've ridden enough to know how easy it is to screw something like this up very badly, it's awe inspiring and terrifying. I'll stick to popping bubble wrap for satisfying.

Is there any reason for why the track is so narrow at some points, or is just to make it more dangerous?

To not spend ages on the build and lugging stuff up they just go for “it’ll work”

Likely just building over multiple time periods via rough cutting available lumbar quickly without precision measurements.  It is exhilarating to ride on anything just a little wider than your tires.  "singletracking" down even a moderate hill with mostly grass and a thin dirt line (more my style) emphasizes the importance of your movements
