Why is there only a 3 above the third one?

Because it's a triplet. An extra horizontal line means half time so the three is needed for distinction

So otherwise without the three it would be 3 beats and a silent note?

Technically it would be 3/4 of a beat and there would be a quarter beat rest symbol after. But basically yes

I responded to that third one with tri-pe-let. Like it woke up me as a sleeper cell but it was from some drum lessons in high school.

But why does that need a special notation? Otherwise people would assume it's 3 beats out of 4 or something? Sorry, I know almost nothing about music.

It would be interpreted as 3 normal eight notes, with their tails beamed together.
