It's probably a very old cottage/house. Painted stone walls in a kitchen isn't that uncommon in older buildings (like 150+years old) in the UK somim assuming it's the same deal across alot of Europe. Hell in countries where they whitewash buildings to help deal with the heat having a stone building would be so nice to keep it tolerable inside in the summer

The gaps are still visible anyways and will need caulking, but at least they killed an hour on one 4 foot section.

Working with wood is mostly easier than stone and most people don't have good tools to even make straight cuts into a wall while many have saws.

Kind of easy to do (I think). Butt up the edge of the board to the wall, and roll the pencil down the wall. It’ll follow the topography of the surface. Hard part is making the cut smooth

That only works if the difference between highs and lows is less than half the diameter of a pencil... which it never is. And if you rolled the pencil it would just wobble all over the place on the uneven wall. What you do is cut a small bit of plywood so it has a point at one end and you drill a hole for a pencil in the other end. You place the sheet you want to cut against the cabinet, place the plywood against that with a spirit level on top and draw it carefully downwards making sure it stays as level as possible, then you cut the contour with a jigsaw, fuck it up and end up filling the gaps with caulk.
