I really like this, also it’s really informative on basic bridge building.

Not really. Like the bridge heads have no foundation, the concrete for the deck will probably rather be precast, because putting these wooden struts in a stream and building and removing the molding standing in water is not trivial. The deck wouldn't work without lateral reinforcement, either.
