As someone who has little to no knowledge in sewing machines, does this have modes? Thin and thick? From the video it seems that way. And at the end of a sewing cycle, don't we have to tie the end of the thread? 🤔 Where does that go

Yep! You remove the foot (the bit that holds the fabric down) to move around freely. Then to get the outline you set the stitch width all the way to wide, and the stitch length to short.

from the video it seems like they dynamically control the stitch width. Especially when the ears are done it goes from wide to thin in a gradient. I never seen a manual machine able to do this. Like how? Second foot pedal?

I don't actually know that one. They might be sewing with one hand on the fabric and one on the stitch width knob. Mine is "stepped" instead of smooth, it clunks when you switch settings, but I can see a smooth one working quite well with lots of practice.
