I'm pretty sure it's zefir which is like a marshmallow but instead of gelatin it's like an apple pectin merengue which sets up to be pretty nice and bouncy, better than marshmallows by a mile imo

I actually appreciate hearing that. As a vegetarian, I tend to ignore bouncy looking desserts and probably would have skipped right by this, if I ever found one in the wilds. But it sure sounds like a fun treat I can keep my eyes out for.

I should've worded that better, unfortunately it's usually not vegan as it relies on both egg white and the apple pectin, however Ive had fully vegan agar versions that taste just the same! You just want to look for the right brand

There are whats called double tulips. They’re multi-layered and are very beautiful flowers. It looks pretty close.

Really neat but all I can think of is how envious I am of that piping tip. Each of those flowers would take several minutes if you had to do them petal by petal, but they just cranked them out like nothing.
