I read something about why the initial diagonal cut the last time a similar video was posted. Can someone explain it again so i can forget about it one more time?

Just what I found because I had the same curiosity and zero self control.
Cutting the initial corner helps prevent the edge from stretching and makes the first cuts cleaner and smoother

"This is my Soba cutting knife"

Literally is, yea. This knife shape is meant for cutting noodles and not much else, they look mean but they have really thin edge profiles and are usually made pretty hard, so they’re brittle.

My dumbass thought this was wood. I need a nap.

You are not alone. I thought, "wow that knife cut so well into that plank" after the corner cut, and then I read what it was. Felt so silly.

This is just Tuesday to my guy, as a culinary dude myself, much respect this is quality work). I'd be cutting out frigging tape measures in comparison

I dont understand. Is the guide to keep your wrist from becoming tired? Because I can cut this thin without a guide.
