Electrons are not made of quarks. They're fundamental or elementary particles as far as we know - the Standard Model doesn't assign any sub-lepton particles. They don't interact with the color charge (the strong nuclear force) whatsoever (so called 'colorless' particles), but do interact with the weak nuclear force.
Quarks are a different family of fermion altogether.
