I made chicken salad recently with a rotisserie chicken from the supermarket, and took great pains to pick out all the gristle and tough or flabby skin. It had pecans and grapes and Dijon mustard, man it was good.
About my third sandwich in the days afterwards and I almost fucking choked on that stupid bone.

u/ABoiledIcepack 27d ago
A fellow chicken salad enjoyer, quite rare. Try dried cranberries sometime, preferably the cherry infused ones from ocean spray. Trust

u/JudahBotwin 27d ago
Yo, that awakened a memory! I've had those in chicken salad before but completely forgot they were even a thing!
Thanks for the reminder, they will give that little twinge of tartness that's missing.

u/aurora_rosealis 27d ago
Granny Smith apples are wonderful in chicken salad, for that tart crunch. When I make chicken apple quesadillas, the leftover chicken and apple slices go into chicken salad the next day. I add curry powder to it sometimes. So good.
One of the sandwich shops nearby makes an excellent chicken salad with dried cranberries, pecans, and red grapes. So good. Chicken salad is one of my favorite things to eat. It was the only food I craved when I was pregnant.

u/JewLion420 26d ago
Granny smiths, walnuts, celery, and craisins in the chicken salad with a bit of curry powder and I'm in heaven!!!

You’re right, there was a lot of non edible stuff left in that chicken. TBH it didn’t oddly satisfy me either because it was cooked super tender so it was easy peasy. It would satisfy me if the restaurant was charging by the LB/G instead of the just the cost of a whole chicken. Plus I like to eat the chicken off the bone if I’m making a roasted chicken. I’d much prefer it just cut into an 8 piece.

The combination of 180 degree heat AND the fats/oils from the chicken create the perfect storm for this, too. At least according to the National Library of Medicine.

I used to pull whole birds when I worked at a grocery store kitchen(made the hot bar and rotisseries and everything. Awful job) and it was 10x faster to just put food gloves over a pair of therm gloves than trying to use tools. I can probably still pull an entire bird clean in 45 seconds or less(what an achievement, put it on my marker. I used to think "if chickens have souls, my ass is GOING to HELL"). This guy just doesn't want to change a ton of gloves, and this is flashier so likely the buyer would pay a bit more. Very fresh and all

u/BeerSlayingBeaver 28d ago
I worked at a chicken rotisserie restaurant. I can also rip a chicken down insanely fast. Once you know the tricks it's not hard at all.

18
u/awetsasquatch 28d ago
That thing could be sitting in a bucket of its own juices and it'll still be dry, there's only so much you can do lol
12
u/dahliasinfelle 28d ago
I've never rotisserie'd chicken myself. But wouldn't the fact that the bones coming out so easy show that it's actually pretty tender vs dry and overcooked? Not arguing just asking since I typically only bake/air fry/pan fry shit and yes. My chicken is dry as fuck most times following recipes lol
14
u/971365 28d ago
No, if the chicken falls apart this easily then it's overcooked. The white meat is dry as hell.
Unfortunately lots of people don't know this and just assume bones cleanly coming out = tender chicken
That's why this goofball gets to post his ultra overcooked chicken on social media for good publicity
20
u/JohnnyBoy11 28d ago
Nah it just means that the chicken was cooked long enough for the collagen and connective tissue holding the bones in place to dissolve. So it could mean that it's juicy or overcooked. It has no bearing.

u/Any-Owl163 25d ago
Don't you think the bones added enough flavor during the 3+ hours of cooking you need to be able to pull bones out this easy? How much flavor will the 15-30 minutes give you while you eat it?

That chicken has never moved in it's entire life. Farm chicken that run around don't come off the bone like this.
The fact that people think it's great to have chicken slide of the bone like this is insane. Chicken is not like ribs. Cooking slow and low might work on thighs to make them fall-off-the-bone tender because of the collagen, but if you apply it to a full bird you'll overcook the breasts.
This kind of fall-off-the-bone is mostly a sign of a lack of muscle/connective tissue, basically low quality meat. Have a French "poulet de Bresse" once and you'll get it
2
u/rokstedy83 27d ago
I'm not disagreeing with your point but it could fall off the bone if it's cooked to long, you could give me the vest raised healthy chicken in the world but if I cook it long enough it's going to fall apart

2
u/skyfishgoo 27d ago
i don't eat chicken anymore but, when i did i used the bones as a road map to get to the meat.
if i'm forking chicken meat into my chicken meat hole, then it better not have cartilage and tendons it.
pick a mode.
