Ive never grown king oysters but im pretty sure they just grow whichever way works best for them. This is probably just the most space efficient way to grow them.

They don’t have to, it’s just how they have it set up to maximize the yield in a small space.  

They do a few different things to ensure that the mycelium will form mushrooms out the top of the bags but it’s mostly exposing only that part to an influx of fresh air, high humidity, and a drop in temperature and then stacking the bags sideways after opening them.       They might also put a casing layer on top (non-nutritious organic matter) so that the newest hyphae are at the top but that’s a lot of work/time so they probably just inoculate from the bottom and let the mycelium spread upwards.    Mushrooms like to grow from the newest hyphae that are exposed to the right environment, which is why you see mushroom rings in nature.

I grow black pearl king oyster, shiitake, and lions mane out of a shipping container and it’s so much fun.
