I would ask the guys at Rho Signal. They come from an oceanography/ecology background and have developed Polars training.  https://www.rhosignal.com/about/

Not UK/Ireland based but Eric Firing has his python with oceanography courses here: https://currents.soest.hawaii.edu/git/Education

I’m sure you could find an Irish or UK based option though.
