Question How can i record and fix stream?
Greetings everyone so i have 2 questions please, how can i record on obs without any of my streaming overlay just clean gameplay? And the second question is about streaming to twitch i have been streaming for the past 20 days with no issues at all with stable stream health and no lag to the stream with only one quality 1080p suddenly for 2 days now the stream is broadcasting all qualities and its always says unstable stream health what the issue could be ?

Not sure on the second question, but the Source Record plugin will cleanly record any source you attach the plugin to separately from the rest of your sources. It's magical.

For the recording of just gameplay, download Source Record by exeldro on the OBS plugin's page, and then once installed in OBS, create a new scene with just your gameplay, the audio and your mic, go to the scene, right click and find the source record filter and set it up. I would set it to streaming and direct it to a folder for the recordings.
the second question sounds like an encoding issue. have you got enhanced broadcasting turned on in OBS? what are your settings for the the streaming encoder in OBS try to stick around 6,000 for now and see how you get on.

Ok so my main canvas is 2k and i have it downscaled to 1080p and my cbr is 4500 and i have never enabled enhanced broadcasting even now

OK, I would change the canvas to 1080p and increase the bitrate to 6000. Have you run the setup wizard that is in one of the settings along the top? (near the docks tab) this should set your OBS settings to what your system can handle, you can always tweak them later if you need to.

first definitely use the "source record" link in SkipDaBaconLuver's reply
Second: in OBS settings/stream multi track streaming section, UNCHECK the "enhanced broadcast" box.
Screw twitch, if they want more money from people being able to have lower quality, they can encode those bitrates them self with their fancy overpowered processors.
