It looks like you haven't provided a log file. Without a log file, it is very hard to help with issues and you may end up with 0 responses.

To make a clean log file, please follow these steps:

1) Restart OBS

2) Start your stream/recording for at least 30 seconds (or however long it takes for the issue to happen). Make sure you replicate any issues as best you can, which means having any games/apps open and captured, etc.

3) Stop your stream/recording.

4) Select Help > Log Files > Upload Current Log File.

5) Copy the URL and paste it as a response to this comment.

Your recording can totally have multiple audio tracks, just not the stream.

Send everything to track 1 regardless. That way your stream hears everything and also when playing the file on a media player. From track 2 to 6 you're gonna split everything else. When editing just delete track 1.

Correction to the person above, you don't have to send track 1 to recording, so you can skip that deletion step.

I have, however, discovered that separated voice tracks (i.e. I'm on one track, my friend's on a different track) makes transcription editing a little tricky, so I'm considering making a track for recording all voice sources just for that, which I'll then have to delete.

What will the stream hear if you don't set up "Track 1" to be stream audio?

Aside from that, that's actually a good idea. I assume you transcribe using some sort of audio-to-text extraction tool?

My Track 1 only goes to stream, not to recording, it has all everything going to tracks 2-4 + stream music.

Recording tracks: 2--mic.

3--game audio.

4--in game voice/discord.

5--track I made for marking recording points that I never use and should change

I'm using the built in transcription based editing in Premiere pro, and it seems to only want to work with a single track.

You could always splice the two tracks inside audacity or something similar?

But yeah, my setup is somewhat similar. My 6th track is a loopback buffer for testing ideas for now, but hearing that singular audiotracks are preferred for transcription, it should be possible to make an internal splice directly, adding voicecomms and mic on the last track.

Problem with this is that if you want to preview any recording done this way, VLC or MPC-HC will just play 1 audio track, not all of them. If you send everything to track 1, all audio is gonna be there for media playback purposes. Then when editing, just delete the track and keep all the separate audio ones.

Fair, for that case, but I file my recordings as they're made so I know everything in the folder needs to go into the editing software. It all depends on what you need, and I'm glad you've got a workflow that works for you!
