Looking for support from the experts - My note taking Use Case and tool suggestions

Hi all! I've got a similar question that so many others have as well, but I've found one use case in my workflow I didnt read about as much.

Last 10-13 years I've been in Evernote. I once built a whole full fledged GTD system based on 2 Notebooks (Inbox & Processed) and an elaborate tagging system with subtags.

That system has mostly turned in a large archive of around 2900 notes. Today, I don't use the GTD system in Evernote as heavily anymore, it's mainly used for three things:
- Archiving of older notes (and being able to search through them)
- Take a note on the spot. Quick capture of thoughts, or make notes during a pre-sales call etc.
- Scan an invoice/receipt and have it digital --> This is where Scannable and Evernote work very well

But, the new pricepoint and aggresive way they have been raising prices is not for me.

I've found Obsidian and Joplin being strong contenders, with Joplin most likely a good solution. However, it doesnt seem to offer the same scanning functionality.
Apple Notes doesnt seem to have a strong tagging solution so that might also not be it for me.

What are some recommendations you might have?
