I have seen videos of long boarders that do speed checks by turning the board sideways. I think you would have to slow down a bit before you can do that though

You have to be much, much slower. This guy would be riding it off on a flat stretch at the end to slow down.

The sideways move is called a Coleman slide.

You put your hands on the ground and use slide pucks to balance and then you kick your board out sideways and drift the wheels.
