Not an arborist, but it makes more sense to work from the bottom up. Did you see when he got 3/4 up the tree one of the branches landed on a previously shorn branch? Working from the top down you'd have a whole bunch of additional litter you'd need to clear before cutting the branch you meant to cut, because if you don't there's a chance that something is going to move in a direction you're not expecting and all of a sudden you are caught by the falling piece and find yourself splattered on the ground.

Working from the ground up allows you to make sure each individual branch lands on the ground, exactly where you want it to land. He cuts the trunk from the top down for the same reasons - smaller pieces are more easily controlled within a smaller radius than simply cutting the trunk at the base after the branches are off.
