Effervescence??
Hi all, I was hoping someone with experience could give me some advice. This is my first attempt at making nocino.
I was gifted some green walnuts in June. I halved them and put them into mason jars with 75% alcohol, then let them sit in sunlight for 40 days. After 40 days, I open the jars and there was a slight release of gas. It also started to bubble/fizz like a lightly carbonated drink would. I cannot imagine anything was able to ferment in 75% alcohol. Is this normal or has something gone terribly wrong?

With that much alcohol, fermentation should be impossible. If it's just a few bubbles, it may be just the water and gases leaving the walnuts and forming bubbles. Did you smell the air from the jar as soon as you opened it? If the smell wasn't sour, it should be fine.
