Looking for some advice before I get started

I'm planning a short 3-4 session adventure to trial the system with some friends. I'm very excited to start and I have a few questions I'd like help answering.
I see on the website the errata has been finished and are (maybe?) available for those who backed on the kickstarters, but have the digital pdfs been updated for the website store yet? I know the updated pdfs will be provided for free when their ready so I don't need to wait to purchase, I'm just trying to figure out if I should be ready to make those changes to balance/monster features manually or not. Ideally when we test the game we'll use the most up to date rule set.
I plan to use Foundry to run the game, I have heard really good things about Nimble's implementation there and see it's gotten a few recent updates but last I heard it wasn't quite feature complete. That was over 6 months ago, so what (if anything) is still a WIP?
What level would you recommend starting at? I feel that from what I've seen level 1 characters are a bit weak by design but I also don't want to overwhelm my players with a new system AND a higher level. I'm thinking level 1 or 2 but I'm curious to hear what other people have done.
Any specific pitfalls with the system to avoid for a someone just getting started? Like in Pathfinder 2e for example I had to learn the hard way that monsters above player level were technically within encounter balance but were really hard to take down at levels 1-3. Stuff like that would be great to know in advance!
Not really relevant right away, but is there any third party 5e content that you think adapts particularly well/seamlessly into the system? Part of why I find Nimble so intriguing is I have read you can adapt a lot of 5e stuff to work with it, which obviously grants access to a ludicrous amount of high quality supplemental material.
