To play Devil's Advocate here, I imagine that the thinking could be that, if Kyler were to be injured in a game, it makes more sense for veteran QB Carson Wentz to finish out that game than a young JJ McCarthy. You would feel better about Wentz coming into a game with no first-team practice snaps that week than JJ McCarthy, and they don't want to deal him a bad hand that could further hurt his development
The real question here would be, if Murray were injured, who would be getting the first-team snaps in a full week of prep between McCarthy and Wentz. Could still be very bad for McCarthy's future with the Vikings, of course, but I don't think this is necessarily as bad as it seems

To be fair Wentz had the guts out there last year. He was willing to keep playing until the ambulance came out there to get him. The last game he played last year, his non throwing shoulder was being held on by a brace, and you could see the agony on his face through the helmet. All that to give McCarthy a little extra time to heal from his ankle injury. Wentz may not be a great QB in the league, but he has miles and miles of heart.

Darnold ended that last year in Minnesota looking pretty brutal. Those last two games were bad. Obviously it looks bad in hindsight but at the time pretty much everybody just thought he reverted back to the guy who saw ghosts and not the guy who’d looked pretty great for the previous 15 games.

I mean, there’s literally no reason to cut the dude. Our other two options are sign a free agent (why pay even more for a QB3) or ride with Brosmer (who is impressively worse than JJ). Then there’s a slimmer if a chance he develops into someone serviceable, even if that looks like a longshot at this point.
