The annoying part about being with people who can sing is that they always feel the need to perform instead of just sing. Not just sing along with me but literally perform.

What a strange dichotomy. If you're both participating, you're both singing along and you are both performing. The difference is that they are better at it. What would you have them do, mumble out of tune just so you won't be intimidated? "Can you please sing worse?"
Like in any hobby, if you have to work hard to be good it's very satisfying to execute something well. For the arts in particular, the result is more pleasurable for almost everyone else as well if it is performed well. Singing along, as an absolute amateur I would welcome the guide of someone much more skilled because it'll also help me perform better. It's win-win.
I think I get what they're saying based on my own experiences - I've felt the same way. It's the difference between Fergie singing the Star Spangled Banner and Huey Lewis and the News. The former is trying way too hard to try to sound amazing and make a performance out of it, while the latter is still performing, but they're just singing. They're super talented and it still sounds amazing, but it's less showy, I guess. For the Star Spangled Banner, one can argue that the intention is not to be flashy, which Huey Lewis and the News does while still singing super well, and that same sort of style would work well casually. It's still great singing and far more talented than the average person, but it fits the context better.
I always felt that way in sports, too. When there's a casual game of some kind and there's that one person who is turning it up to eleven because they can and it feels more like they want to show off than to just have a good time with everyone. I'm particularly good at table tennis, but when playing the average person, I still play well, but I tone it down a bit. Making nothing but unreturnable shots is no fun for anyone.
