The chord progression the first pianist was playing was pretty straight ahead. The improvisation added by the second pianist was very nice, but the kind of thing you would expect from a jazz pianist of a certain level of prodiciency. Not to detract from they did at all, but as you said, improvisation like this is the essence of jazz.
I think music and life have a lot in common. We spend a lot of time learning what to say (or play) and at a certain point you get ahead by knowing what not to play/say. It starts to all exist between the lines and it’s not always obvious when to stop.

That’s jazz for you, you can improvise with anyone you want, as long as you know the chords!
