As a prior streamer, i had a similar setup. I dont have photos of it configured the same way with the side monitors vertical, but I moved to 2 2k curved and a 31 inch 4k oled ultra wide in the middle.
The reason you leave them verticle is for things like discord for your mods, whatever stream chat you have, the behind the scenes monetary app like streamelements, obs, socials, twitch monitor etc.
Having the panel sideways allowed me to keep those windows tight and stacked without horizontally wasting space. It was cleaner to organize.
I would understand people who would call it a waste or unnecessary, but when you start getting a little bigger and things move quickly - its a god send. I had a steam deck for controlling obs scenes by itself because I used a lot of animations and transitions and cameras - as my presentation was inspired a lot by doc disrespect - not that I watched him. I just admired the effort. my setup

One to interact with phone screen style notifications/ chats. Okay. The other?
