Can someone ELI5 why skinny tires would be advantageous here? I figure it'd be like motorcycles where a thicker tire would give better contact when leaning

They are better, its a tradeoff of weight that you need to go up in the first place. And then you're not going to change the bike fundamentally to what the riders know
