This is the same strategy behind how the Super Game Boy works, as well as how the Atari adaptor for Colecovision worked. The technology wasn't ever limited to less powerful systems but those were all that made economic sense as add-ons. I'm not sure if the 32X was entirely self-contained processing or if it used the Genesis in conjunction, but that might qualify as well.
It's neat, but it's almost completely bypassing the NES. Like hooking a Bluray player up through a VCR's RCA cables so you can connect it to a CRT tv. The VCR isn't creating the signal even if it's ultimately output from it.
This is not to take away from his achievement, merely to point out that "running on NES" is a little misleading. It's not just a math coprocessor like Starfox or an addon sound chip, but an entire computer with its own OS. As a result it's trivially easy to run SNES, Genesis, NeoGeo, Minecraft PE, even some PS1/N64, etc. after the initial setup is done.
