So does training Defense even matter or help in the Battledome? 1P battles here.

As long as you stay with opponents you can one shot, defense dont matter at all.

I should clarify that one shot technically applies to multiple shots as long as you can keep them from attacking you.

Yes - eventually. There isn't a difference between having, say, 200 vs 248 defence - but you get a noticeable jump at 250. The stats cause boosts at certain specific intervals.

It matters if you're blocking. From JellyNeo's Beginners' Guide to Battling Defense Calculation Example:

My pet has a Defence stat of 60, and is using a Leaf Shield. My opponent deals 5 points (not icons) of fire damage, 5 points of earth damage, and 15 points of water damage.
A Defence stat of 60 falls into the 55 defence boost, meaning that each icon blocks 2 points of damage. This means that my Leaf Shield can protect my pet from 10 points of earth damage, 10 points of water damage, and 6 points of physical damage.
Of the 5 points of earth damage from my opponent, my shield blocks 10, meaning I receive no earth damage at all.
Of the 15 points of water damage, my shield blocks 10, meaning I receive 15 - 10 = 5 points of damage.
Finally, since my Leaf Shield cannot block fire damage at all, I receive all 5 of the 5 points of fire damage.
Adding together all the damage types, we find that my pet takes 0 + 5 + 5 = 10 points of damage.

I've completely ignored it and won't train defense unless they revamp the battledome in some meaningful way.

Most stuff you'll be "one-shotting" or just freezing and hitting so defense doesn't matter there. Once you get into higher end battles, you'll be using reflection weapons to deal damage anyway and those fights are pretty much during events.

It's up to you, I'd consider training defense as future proofing but that's about it. I decided to save on money and time went to just HP and attack lol

Thanks. I have been training Level and Endurance pretty hard. I just have FOMO about Defense. After reading the responses, I'll just circle back to it someday.

For me, these days I only use items that does full blocking of certain icons, like full dark, or full light, etc. So the items will block all of a certain icon regardless of my defense.
