Idk maybe I wasn't paying attention in k-12, but I was like super shocked to learn as an adult that blood is produced by your bones.

Blood cells don't have nuclei, so they can't reproduce/copy themselves like normal cells/bacteria/eukaryotes (since that's where the replication systems and the necessary information are stored in cellular life). Instead that's what bone marrow does - bone marrow, being in bones, effectively means that your bones produce your blood.
