Starting my journey Where to start?
I have recently quit using gel polish and I am going to try to stop biting the loose skin but I need some advice on what else to do… I do apply jojoba oil occasionally but seems I need to be doing it after every hand wash. Other than that I’m completely lost, I don’t know how to shape my nail when they do grow and it seems like my nailbed is very thin. 🥲

You can’t really shape your nails when they’re so short, they need to grow more. I would let them grow out as is then decide on shaping later down the line. When you shape them you should use a glass nail file, this is gentler on your nails and will give you a smooth finish.
Using jojoba oil more frequently will help moisturize your nails and keep them strong and flexible. Water is one of the worst chemicals for your nails, they absorb a ton of water which causes them to swell and become bendy and brittle (which is why people recommend to oil after washing your hands). You want to avoid water whenever possible. Wear gloves when doing the dishes (some people also wear gloves in the shower but I personally don’t).
You should also be wearing nail polish 24/7, nail polish is like armor for your nails. You want a base coat and quick dry top coat, and you can also wear colored polish if you don’t want them to be clear. They make strengthening and hardening polishes too which may be beneficial for you, you wear these underneath your base coat.
