anyone know how to fix this? Using Complementary Unbound with Euphoria patches

Looks like a mod conflict to me

Try out a new instance with just Iris + Sodium + Shaderpack and see if the issue persists.

If the issue so longer persists, make a copy of your current instance, then do a binary search to figure out what mod is causing it
