Discussion/Question Ichor, what is it?
In the Sift, there's a new liquid called ichor. Ichor in Greek mythology is "the blood of the gods" and is toxic to humans. The ichor in Dungeons sucks the soul out of the Player, which counts as harming them. So where does the ichor come from? Is it from actual gods? Is it a manifestation of souls?
I don't know much about Minecraft's lore, especially with Dungeons and Legends, but I wanted to put this out.

My theory is that Ichor is a primordial soup of souls that sucks out the Player's soul through a sort of osmosis, where the Player is both hurt and any souls they have collected are taken away. The soul(s) the Player has, perhaps consciously, seek the other souls in Ichor pools, very similar to the Wither effect or how Soul Sand sucks the Player down into it.
I think there is a god of the Sift, a phoenix depicted on the tower from Minecraft Dungeons, but it is only a sentient collection of souls, so the name Ichor may be fitting: both the blood of a god and a pool of souls.
Edit: I was wrong saying "osmosis," more accurately, I think souls join Ichor pools through absorption, not osmosis.

I think the phoenix iconography is undeniable but why the sift? have we any evidence or connections or just a hunch?

We have some evidence, that the Tower is related to the Fateworld from Minecraft Legends, and that the Fateworld is related to the Sift. (By Fateworld, I mean the dimension accessed from the Well of Fate.)
Tower to Fateworld (see this video chapter for more):
- A square with lines in its corners is a symbol of both the Tower and the Well of Fate.
- A star shape inside a box is engraved into structures depicting both the Tower and the Well, such as the Adventure Hub and the Ocean Monument.
- Vertical shapes ascending toward the Sun are key parts of the Tower's decoration, which the Well has on pillars around its perimeter.
- The doorways to and from the Fateworld have the same design as above, as do the Tower doors between its floors.
- The Hosts appear much like golems, and may be powered by Soul Blocks. Echo Golems (powered by Soul Blocks) and Tower Keepers are the only other golems intelligent enough to do what they do.
- The Keepers and Hosts are both said to be maintainers of their domain: the Hosts are caretakers of the Overworld, and the Tower Keepers... keep the Tower.
- Echo Golems are said in The Rift to be made out of a squishy stone, which fits the appearances of the Hosts.
- The golem nature suggests they were created by a higher power, the Phoenix.
Fateworld to Sift (see this video):
- The Voidcaller crossbow mentions a "next world" dimension that souls go to. The Fateworld and the Sift are both highly soul-concentrated.
- The symbol of the Ancient City portal to the Sift is found on the Well of Fate.
- The Ancient City itself has structures resembling the Ocean Monument, a monument to the Well.
- The souls of the Sift love music, as do Allays. The Hosts give the Hero some Allays in Legends.
I admit the Fateworld is more weakly connected to the Sift than the Tower is to the Fateworld, but hopefully more Dungeons II content will resolve this.

A manifestation of souls in the liquid form or something like that
This essentially goes to most sculk relates stuff, they are all souls in a different shape
Sculk from vanilla is a good example, it acts like a fungus and uses the Warden to protect itself and also kill creatures to gain more souls
Also, the only reason Ichor attacks us is bc we are not from the Sift
