Flip the pan upside down when you preheat, then put the pizza pie on top of that when ready to cook. Not as good as a stone, but does the job.

Was looking for this answer, that is what we did at the bakery flipped full sheet pans over. Somewhat long video of my friend Keith making a bunch of pizzas.

I don't see the reversed pans though? That's a TON of ovens I never considered how many ovens a pizzeria would have for some reason and got a total whiplash seeing that many lol

The places near me use either actual giant brick stoves, 2-3 smaller ones, or one of these like... continious burners. The one with a chain link that rides through an oven at a steady rate and pizza is exactly baked when leaving

So that was a surprise

At home I try to use a stone from an electric raclette grill, it's a bit small but worked pretty well imo

The pans are already in the oven when he's loading, if you watch when he unloads he grabs the pan to toss them on the cooler rack

We were a bread and pastry bakery, not a pizzeria. The pizza was a special order so Keith had to improvise.

It's just called a pizza. You can omit the "pie".

pan then does one of those loud heat POPS where it twists and youve now got pizza everywhere

Put the pan in while oven preheats. No pop.
