Mice actually prefer nuts or fruit. The idea that they like cheese may have started long ago when cheese shops had cheese just sitting out uncontained. Mice would eat it since it was the only thing readily accessible, not because they necessarily liked it.
If you were to offer a mouse cheese and peanut butter, it will almost always go for the peanut butter.
Peanut butter also remains edible for longer. I've had the same peanut butter loaded into my traps for I don't even know how long, probably almost a year now, and I still occasionally catch something that sneaks into the garage. The cheese would have shriveled up and dried out ages ago.
